Get cookin' with this easy muffin recipe

With winter making it unbearable to be outside but hard to stay inside we are often looking for things to do that keep us occupied and warm. This simple muffin recipe will do just that. No need to be skilled in the kitchen to make these, just grab what you have and get started!

Ingredients:

1/2 cup butter

3/4 cup sugar

1 egg

2 cups flour

2 tsp baking powder

1/2 tsp baking powder

1/2 tsp salt

1/2 cup milk (I always add a splash more)

1/2 tsp vanilla

1 1/2 cup chopped fruit (I either use blueberries or strawberries. Blueberries are pictured.)

1/4 cup low-fat sour cream (makes the muffins very moist)

Directions:

1. Preheat oven to 400 degrees and set aside a muffin tin. You can line them with cupcake lin­ers, but this is optional. If you choose not too, make sure to spray the tin with vegetable spray.

2. Mix butter and sugar together in a mixing bowl. Add in egg and beat until mixed.

3. Add flour, baking powder and salt into the bowl and mix. Add in milk, vanilla and sour cream.

4. Gently stir in your choice of fruit.

5. Spoon into pan and sprinkle sugar on top.

6. Bake for 20-25 minutes or un­til a toothpick comes out clean.
