Early one morning, you walk into the dining hall when 50 Cent's "In Da Club" starts to play: it's the alarm on your cell phone reminding you that one of your classes begins in 15 minutes. What do you do? Place a spoonful of scrambled eggs on a plate, scarf them down, and hope that you have something decent to get you through two back-to-back classes? Let's try something a bit more appetizing, and something that will keep you running all day, if need be. How about a fruit and yogurt granola parfait?
When in the cafeteria, take advantage of the available variety of fresh fruit, granola, and yogurt. There is more to the cafeteria than the food prepared by Gourmet Dining Services. If you apply yourself, and think creatively, there are several combinations and platters that can be created.
Ingredients:
About ¼ cup Yogurt (i.e. plain, vanilla, strawberry)
About ¼ cup Fresh berries /dried fruit
About ¼ cup Granola
Preparation:
In a cup, spoon in equal amounts of yogurt, fruit, and granola. Enjoy! And hurry to class!
This is not exactly a recipe, but more of a method of how to prepare a fruit and yogurt parfait. You can feel free to create any variations of this parfait - be creative.
Feed your brain something delicious before running to class early in the morning! All you will need are equal parts of each ingredient.
